You need only add a bit of interesting strumming/fingerpicking or some chord inversions to keep intermediate and advancing players interested. None of the carols has more than 4 chords and a number have only 2, which makes them ideal for beginners. The order of the songs may seem random, but they are placed so that no two songs are in the same key in a row and the carols alternate between slow and fast-paced tunes. They were chosen firstly on their merit as great carols, secondly as fairly well-known songs of the season and thirdly to offer good variety in a set that makes sense for performing/caroling.
